- 40ml.ofSoy Sauce

- 10ml.ofAgave syrup

For serving and garnishing
- 320g.ofCooked Ramen Noodles
- 40g.ofGreen Chive

Steps
1BROTH: Mix the Guimarana pork broth with water, bring to a boil for 3 minutes, then add all the vegetables and remaining broth ingredients. Boil for 10 minutes and let it rest for another 10 minutes. Strain the ramen broth and reheat just before serving.
2NOODLES: Cook the noodles in water for 1 minute less than the time indicated by the manufacturer, then set aside.
3“BACON” STRIPS: Sauté the garlic and ginger for one minute, then add the remaining ingredients along with the thick-cut plant-based bacon strips. Cook until reduced and caramelised on both sides.
4TO SERVE: Place the noodles in a bowl, add the sliced shiitake mushrooms and the caramelised bacon strips, pour over the boiling broth, and finish with green spring onion, nori seaweed, and a few drops of sesame oil.
